What is fermentation?
Fermentation is the process by which microbes and yeast act on sugars in food that happen to preserve those foods for later consumption. One result of vegetable fermentation is nutrients become more available to us and B vitamins such as folic acid, riboflavin, and niacin are created. Lacto-fermented foods have been known to treat irritable bowel syndrome and to fight the side effects of antibiotics.
Why should I consider taking a fermentation workshop?
If you would like to take more control of your diet, have an interest in cooking and/or food preservation, or want to try something new, a fermentation workshop is for you.
What is offered in a workshop?
Fermentation workshops last approximately two hours and include information about the fermentation process, benefits of fermented foods, a demonstration and tasting of homemade sauerkrauts (and other fermented foods) and the opportunity to make your own sauerkraut. Each participant will go home with a quart of sauerkraut to ferment at home along with a "kit" for creating more fermented goodies in the future.

WATER KEFIR FAQ
What is water kefir?
Water Kefir is a non-dairy, slightly effervescent, probiotic drink. It is made from water, sugar, and kefir "grains." The grains are bacteria and yeast that feed on the sugar in an anaerobic environment. Most people flavor the base water kefir with fruit.
What does it taste like?
Water kefir tastes like a soda, but is considerably healthier. Wow Wow produces Lime/Basil, Lime/Ginger, Lime/Mint (Mojito), and just plain Lime. Other fruit flavors will be available in season.
What are the benefits of drinking water kefir?
Like other probiotics, water kefir contributes to good gut health. Unlike yogurt or milk kefir, water kefir has no dairy and so it is good for the dairy intolerant. Water kefir helps with digestion and helps produce healthy flora in the intestine.
What is the difference between water kefir and kombucha?
Although both are probiotic, water kefir utilizes lactic acid and yeast in the fermentation process (the same bacterial strains as in vegetable ferments) while kombucha uses acetic acid and has a black tea base.
